Sugar Free Granola

I've tried several recipes for a healthy granola, and this is my favourite - it has oats, which do have gluten, although some say it's a different variety of gluten and some gluten-free peeps can eat it happily. I think when it comes to mueslis, the oats really make it a meal :-) This recipe has you making your own apple sauce from scratch to act as the sweetener, but if you're not interested in doing that, you could just by a jar... just make sure it's a high quality, low preservative brand :-)

- 1 large granny smith apple, peeled and cut into chunks - ½ cup water, more if needed - 3 cups rolled oats - ½ cup chopped walnuts - 2 tsp cinnamon (I normally add more, simply because I adore it!) - You can add more nuts or seeds if you wish – coconut, pepitas and chia all work really well

Place the apples and water in a saucepan and cook on medium-low until very soft. Add a little more water if necessary. Combine walnuts, oats and cinnamon in a large bowl (and any other ingredients you’re using), then add 3/4 cup of the soft apple and mix well. Spread onto a tray lined with baking paper and bake at 160 degrees for 30-40 mins or until dry and golden brown (watch closely). Turn mixture with a spatula every 10-15 mins so it cooks evenly and doesn't burn.

Serve with some yoghurt or milk of choice.
