Gluten & Refined Sugar Free Donut Holes
A quick and easy recipe for little morsels that taste way naughtier than they actually are... they're gluten, refined sugar and dairy free!
This one is great for those lazy holiday afternoons when you feel like baking up something, but really don't have the care factor for anything complicated ;-)
This is also an especially good one to do with the kids. Not only are they fun and easy to make, but they're similarity to 'real' donuts makes them the great for transitioning little tastebuds to gluten and refined sugar free foods.
If you've got the time and patience, you could use this batter to make full donut rings as well :-)
Makes 12 donut holes. - 1/4 cup coconut sugar - 1/4 cup melted coconut oil - 1/4 tsp vanilla extract - pinch of sea salt - 1 organic egg - 5 tbs coconut flour
Preheat oven to 160 degrees. Using an electric mixer, cream together the coconut sugar, coconut oil, vanilla and salt. Add the egg and mix until well combined. Stir through the coconut flour. Using roughly 1tbs of mixture at a time, form into balls and place on a baking tray lined with baking paper. Bake for 10-15 minutes or until browned.
Best enjoyed straight from the oven, when they're nice and crispy on the outside, but soft and fluffy in the middle! x
