Chicken Nuggets
Who doesn't love schnitty? Nobody. Luckily, this naughty-made-nice version makes it a whole lot more appropriate to have crunchy chicken on your regular dinner rotation. Sesame seeds are one of the oldest condiments known to man, and are packed with nutrients such as calcium, magnesium, iron and zinc.
- 400g organic, free range chicken tenderloins, each cut in half - 2 organic, free range eggs, whisked - ½ cup coconut flour (or other gluten free flour) - 1 cup sesame seeds - ½ cup olive or coconut oil for frying
Heat oil in a saucepan over medium-high heat. Toss to coat each piece of chicken in the flour, then the egg, then the sesame seeds. Add to oil in single-layer batches, turning once. Cook until golden and crispy, then transfer on to some paper towel to drain.
