Perfect Cauliflower Rice

Ever wondered how to get perfect cauli rice?? Cauliflower makes a surprisingly effective and versatile alternative to rice - it gives that same sauce-soaking fluff of white rice, but instead of a carb overload, you get a veggie vitamin kick!    

There are so many different ways to reportedly make the 'perfect' cauliflower rice, and there is a very real risk of ending up with a white sludge... but I guarantee that if you follow the below instructions will leave you with the perfect consistency! :-) 

Makes 4 serves

Ingredients

  • Half a head of organic cauliflower
  • 1 tsp garlic powder (optional) 
  • Salt & pepper to taste

Method

  1. Break the cauliflower up into florets. Using about a cup of florets at a time, process in a blender until it reaches a rice consistency.
  2. Place in a non-stick saucepan over a medium-low heat (don't add water). Put the lid on and allow to steam for about 10 minutes, stirring every few minutes so it doesn't stick to the bottom.
  3. Once soft, stir through garlic powder (if using), salt and pepper. Serve with something saucy!
